爬山 (pá shān) is the everyday way to say hill walking or hiking. It is a compound of 爬 (pá, "to climb, to crawl") and 山 (shān, "mountain, hill"), and together they name the whole activity rather than literally scaling a rock face.
Like many verb-object compounds in Mandarin, 爬山 (pá shān) can split apart: 爬了三个小时的山 (pá le sān gè xiǎo shí de shān), "climbed for three hours", slots information between the verb and the object. Do not treat 爬山 (pá shān) as one unbreakable word the way English treats "hillwalking".
In China this is a very ordinary weekend activity, not an extreme sport, so translate it as "hill walking" or "going up the hills" rather than "mountaineering" unless the context is genuinely about serious climbing.
