Bos, bovis is third declension and common gender, masculine or feminine according to the animal, and it is irregular where you would least like it to be: the genitive plural is boum, not bovium, and the dative and ablative plural are bobus or bubus rather than bovibus. Learn those three by heart and the rest behaves.

One word covers ox, bull and cow together; Latin only gets specific with taurus or vacca. English bovine comes straight from it, beef by way of French boeuf, and, at a longer remove through Greek, butter. Spanish buey and Italian bue are the same animal still standing there.
