猪肉(zhū ròu) - pork in Mandarin

猪肉 (zhūròu) is "pork", from 猪 (zhū), "pig", and 肉 (ròu), "meat". It follows the same animal-plus-肉 (ròu) pattern as 牛肉 (niúròu), "beef", and 鸡肉 (jīròu), "chicken meat".

猪肉 (zhūròu) is by far the most widely eaten meat in China, so much so that in everyday cooking talk, unqualified 肉 (ròu), "meat", usually implies pork unless the context says otherwise. Classic dishes built on it include 红烧肉 (hóngshāoròu), "red-braised pork belly", and 糖醋里脊 (tángcù lǐjǐ), "sweet and sour pork".

The traditional character 豬 (zhū) keeps the same dog radical, used broadly for beasts, plus 者 (zhě) component as the simplified 猪 (zhū), so recognising one gets you most of the way to the other, unlike some simplification pairs that change shape more drastically.
