Every -er spelling shift protects a sound
Mangeons keeps its e, commençons its cedilla, achète its accent, espère its grave. None of that is irregularity; it is French refusing to let a soft g harden, a soft c harden, or a stressed vowel go silent. See the principle once and the shifts stop looking arbitrary.
