Réserver is the ordinary word for booking a table, a room or a seat, and it is the one you will need at a hotel desk or a restaurant door. English "reserve" works as a translation often enough, but the French verb is far more everyday: where an English speaker would say "I booked a table", French uses réserver without any hint of formality.
The second sense is worth knowing because it does not look like booking at all. Réserver also means to set something aside or keep it for someone, as in elle réserve le dimanche à sa famille. The thread running through both senses is the Latin original, reservare, "to keep back" - a booking is just something kept back with your name on it.
