The short version
Ed smooths e before another e
Plain e is fine before most vowels, e io included, but Italian reaches for ed almost automatically when the next word also starts with e, to stop two identical vowel sounds colliding.

Poiché states a reason, it never asks for one
Perché does double duty as both why and because; poiché only ever means since or because, and it cannot open a question. Keep perché for asking and save poiché for the more formal, written answer.
