Spuo, spuere, spui, sputum is third conjugation, and the word is plainly onomatopoeic - it sounds like what it does, as English spit does and as Greek ptuo does. Polished prose has little use for it; medicine and the Gospels have a great deal, where the spitting is either a cure or the worst available insult.

The compounds carry more weight than the simple verb. Exspuo is to spit out, conspuo to spit upon, and respuo, "spit back", is the ordinary verb for rejecting an argument outright. The supine sputum walked into English medical vocabulary untranslated and stayed there.
