Subito is the ablative of the adjective subitus, "sudden", frozen into an adverb: "at a sudden moment". Knowing that stops the usual mistake, which is to parse it as a dative or as some form of subeo, the verb it looks related to and is.
It is the neutral word for suddenness. Repente is sharper and more violent, and the two are stacked as subito repente when a writer wants the shock doubled. Latin also has ex improviso for the unforeseen and confestim for the immediate, which is a different idea - subito is about lack of warning, not speed of response. Italian subito, "at once, right away", is the same word with the surprise worn out of it.
