Undique is unde plus the generalising -que: literally "from wherever", and so from all sides. Strictly it is an adverb of origin, but Latin lets it slide into "on every side" and then into plain "everywhere", and Caesar uses it constantly of an army being surrounded.

Do not read the ending as the connective -que. This -que is the indefinite one, the same as in quisque and ubique, and undique never joins two things together. If you want a static "everywhere" with no idea of motion from, ubique is the safer choice; undique keeps a faint pull towards the edges closing in.
