鸡肉(jī ròu) - chicken (meat) in Mandarin

鸡肉 (jīròu) is chicken meat, built from 鸡 (jī, "chicken", the bird) plus 肉 (ròu, "meat"). Mandarin routinely marks the meat of an animal this way, so pairing the animal character with 肉 (ròu) is a pattern worth learning once and reusing everywhere: 牛肉 (niúròu) is beef, 猪肉 (zhūròu) is pork, and 鸭肉 (yāròu) is duck.

You will meet it constantly on menus and in home cooking. 宫保鸡丁 (gōngbǎo jīdīng), kung pao chicken, and 鸡肉炒饭 (jīròu chǎofàn), chicken fried rice, both carry 鸡肉 (jīròu) as a named ingredient rather than just "chicken" the animal.

The trap for an English speaker is 鸡 (jī) on its own. Said alone, 鸡 (jī) usually means the live bird or "chicken" as a category, not a portion on a plate; add 肉 (ròu) when you mean the meat itself, the same way English speakers distinguish "chicken" the animal from "chicken" on the menu mostly by context, but Mandarin makes the distinction explicit in the word.
