Ŝia is ŝi plus the adjective ending -a, and like every adjective it copies the case and number of the noun it sits beside: ŝian manon, ŝiaj manoj. The hard part is the contrast with sia. Use ŝia when the owner is some other woman, and sia when the owner is the subject of the same clause, so ŝi rigardis sian manon is her own hand while ŝi rigardis ŝian manon is somebody else's.
