Mucho functions as both an adjective (agreeing with the noun: "mucha agua," "muchos libros") and an adverb (invariable: "trabaja mucho," "me gusta mucho"). As an adverb it intensifies verbs, while muy intensifies adjectives and adverbs - a distinction learners must master early.
Mucho cannot replace muy before adjectives. "Es mucho bueno" is a common but incorrect construction: the correct form is "Es muy bueno." Conversely, "trabaja muy" without an adjective following is unfinished - use "trabaja mucho" to say someone works a lot.
